2006 Hot Chef/Restaurateur in South Coast Style Magazine and is the representing restaurant for the South Coast in the Magazine's Coastal Tucker Trial for 2006 and 2007.
Laguna D'zur International is Burrill Lake's first Exquisite Dining Restaurant. It has been opened and established by International award winning chef Kaibil Velazquez.

He has been influenced and maintains contact with worldwide renown Chefs and Australia's master Chefs and chosen to be part of elite reputable award winning brigades like Palazzo Versace, Lynch's (Australia's only Restaurant to receive the Michelin gold statue), Simply French, Pieros crown Casino amongst many other fine dining establishments.

Kaibil's extensive study in International culinary gastronomy, Languages and Music allows the input to Laguna D'zur's Exquisite world fusion menu and the new Rhythm Cuisine shows, incorporating percussion and live fusion food preparation.

The menu offers multi cultural cuisine with exceptional attention to detail and true unique elements to A-La-Carte Dining. Laguna D'zur uses and supports all local quality produce.

Laguna D'zur International is a BYO Restaurant. The Establishments walls are decorated with stylish and intriguing paintings from Multi award winning local artist Phil Brandon.

Laguna D'zur International specializes in Gastronomical Culinary Practices. Insisting on only the freshest food preparations, using Meat, Poultry, Seafood, Game, Dairy and Vegetables, nuts /herbs. Proudly sourcing and supporting all quality local produce.

Under "NO" circumstances do we permit the practice of deep frying food, using preprocessed frozen products or MSG. This is most nutritionally sound for our Diners and in true accordance to reaching a unique caliber of a healthy and exquisite dining experience.

The menu allows your palate to savour multicultural cuisine with a diversity of international culinary techniques. Our present menu offers signature dishes incorporating cuisine from over 12 countries around the world all under one roof.

Kaibil Velazquez International Master Chef is a stickler for detail in delivering cuisine which is handmade; he bakes his own bread, pastry, shortbreads, marinades, vinaigrettes, applying a three day process producing stocks and derivative sauces for each menu item. Kaibil commits to that additional time with Seafood by filleting fish, cleaning all crustaceans and curing of selected seafood's.

Red Meats are aged and tenderized following the grain exposing marveling to retain the most possible moisture. All de-boning, filleting and precision cuts of Poultry are executed with finesse to allow flavors to be absorbed for ultimate final results. Game is marinated accordingly and handling is very minimal to deliver the most of such delicate produce.

Vegetables/ Fruits exotic nuts and herbs are hand picked daily so they are the freshest point before the process of hand carvery, which are used as accompaniments, infusions and delicate Garnishing. All Dairy products are sourced from our region, ranging from Milk, Cream, Cheese (Soft, Mature and Blue), and unsalted Butter.

In dedication to our sons, Estefan Jesua Velazquez and Noah Lawrence Velazquez we have launched E-J Vie Culinary Passion and N-L Vie Novel Luxuries Signature products. E-J and N-L being their first two initials and "Vie" a French word meaning "Life", which resembles our life of fine innovative cuisine.

There is a selection on our display and it ranges from sauces, vinaigrettes, shortbreads, pan- forte, specialty breads, Exotic marinated poultry and seasonal innovative salads. These products are made and packaged here at the Restaurant. They are made from natural ingredients and are free from preservatives, colours and additives. They change regularly and are available for purchase.

These products are great for gifts and can also add an innovative touch to your personal recipes. Please feel free to view our display. (Product availability subject to change depending on seasonal produce and available stock).

"PASSION, INNOVATION, VISION"
A Fusion from a unique Maestro Culinario
Laguna D'zur International and its driving force Kaibil Velazquez, held a fundraising dinner to support our Australian culinary team to compete at the culinary world cup held in Germany Eurfurt in 2008.

The 7 course degustation dinner was crafted by executive chef Kaibil Velazquez, using quality local produce, implementing techniques and cuisine styles from 7 member countries to the world association of chefs societies. Kaibil Velazquez who is a a member of the Australian Culinary Federation donated funds raised to the federation in support to send our Australian culinary team to Germany next year.

On the evening Kaibil also celebrated his 20 years of professional experience, achieved within Australia's award winning establishments and working amongst some of the Worlds and Australia's renowned culinary masters.
